After Monogram Madness (Part 1, Part 2 and Part 3- did I really do that?), I think we all need some chocolate and a quiet corner to crawl into the fetal position… I admit, I do get just a tad obsessed over things… I’m really sorry if anyone got hurt as I dragged you all through my monogram manic rampage. Although, the good news is that I now have some fabulous monogrammed pillows (8), dish towels and place mats out of my manic flare-up and hopefully you do too! Several of you have told me that you are using the easy monogram techniques, so be sure and send us pictures of your fabulous creations! So let's move on to what we REALLY came here for- CHOCOLATE CAKE!
I am not good at baking- at all! My whole life I have been surrounded by amazing and gifted bakers but for some reason, I did not get the creative cupcake gene. My husband says it’s because I have no patience and want instant gratification- like the kind that the glue gun provides (Hmmm, that’s a compliment, right?). When a friend told me during a poker game that she has a recipe for a 5 minute microwave chocolate cake that is made in a coffee mug, this instant gratification girl perked up! Really? 5 minutes? Microwave? It can’t be good, right? WRONG! It’s pretty good.
The recipe is super easy and yep, it's made with staple ingredients in your pantry, cooked in a standard coffee cup, and it really works! All you do is turn the mug over onto a plate after zapping it and it slips right out… Of course, nothing is better than a chocolate cake baked in the oven but it will quickly satisfy a late night CRAZED fit when seconds count and when your alternative is to break into your child's Lunchable's for the world's smallest chocolate bar. I must tell you, the best thing to do is to eat it when it's hot out of the microwave, especially with a scoop of vanilla ice cream on top!

Ahhhh, Bakerella… Love her! She is at the top of my list! Bakerella is one of the most incredible Blogs I follow. Angie could not have picked a better name for her Blog as she is truly the Cinderella of baking! Even though Bakerella provides very detailed recipes and tips, I admit, I go for her pictures, which make her baked goodies appear as if they could magically transcend through my computer screen and into my mouth! I can just smell the cake baking as I flip through the wonderland that she has created. Look at these fabulous Easter Cake Pops that she made.

Seriously, I am so bad at baking that if I tried to make these cake pop bunnies, I would end up with a big ball of uncooked glob with cute ears… However, I was thinking that if I were supervised by my “supposedly” patient husband who could guard the oven door due to my “supposed” lack of patience, maybe I could make these Red Velvet Cake Balls that are made from a cake mix.

5 Minute Microwave Chocolate Cake in a Mug
4 -Tablespoons Flour
4 -Tablespoons Sugar
2 -Tablespoons Cocoa
1 -Egg
3 -Tablespoons Milk
3 -Tablespoons Oil
3 -Tablespoons Chocolate Chips (optional)
1- Small Splash of Vanilla Extract
1- Large Coffee Mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and the vanilla, mix well.
Put your mug in the microwave oven and cook for 3 minutes (1000 watts).
The cake will rise above the mug, don't be alarmed
Allow to cool for just a minute and turn over onto a plate (or eat out of the mug).
Serve with hot fudge or ice cream!
